A wine club membership, called the Cellar Pass, includes a selection of four wines four times a year at $150 for each package, plus invitations to pickup parties and other VIP events. “It’s our version of a wine club,” the owners say. “Unlike most wine clubs where you only get wine from one producer, we will be providing you with wines from many different producers from all around the world.”

The dreamchild of husband-and-wife Chris and Jessica Castillo, this rustic downtown Fullerton hideaway in a historic red-brick building is popular with the locals for its alluring combination of casual charm, good food and an excellent wine inventory. Weekly wine and beer flights are alway intelligently composed (and sometimes even humorous – there’s a Girl Scout cookie beer flight). The shareable plates match the wine perfectly, and they’re imaginative: baked brie in a sourdough bowl, chorizo potato empanadas, the P.L.T. (pancetta, arugula, tomato and thyme mayo on an open-face brioche). The heated patio is a favorite spot for couples.

…I’m even happier when the empanadas arrive. They are beautiful little envelopes of dough, so wonderfully golden and flaky, served so hot that I almost burn my tongue. The beef filling is deeply, richly flavored with some sort of South American adobo. I imagine someone’s Argentine grandma wearing a frilly apron, standing over her kitchen table, stuffing packets of dough with ground beef that’s been simmering on the stovetop all afternoon, perfuming the entire house. She’s probably drinking a fine malbec, too, like the Swinto that I notice on the list here.

Why they’re No. 1: In a word, service, Chris Castillo said. He wants patrons at his bar to be comfortable from the moment they walk through the door. He credits his employees for creating that comfortable atmosphere. “They’re the ones who make the place successful,” Castillo said. “Their passion and their joy really make the difference.”

Why they’re No. 1: “We offer a comfort level here,” spokesman Matt Plum said. “It’s a cozy atmosphere, and we still have the same crew we hired four years ago. Good service behind the bar, that’s a huge factor.” Bartenders listen for key words in questions people ask. “We have to listen to what customers are saying,” he said. Wine drinkers have their favorites, he added, but he likes to get creative and urges customers to try new tastes. People trust him, and he takes that seriously. “Wine is a lifestyle, hanging out with family and friends, and enjoying meals,” he said.
